Guacamole


Hi WORLD!
Sometimes, a great big bowl of guacamole makes the whole world better. It is so easy, and so delicious, and very easy to make in your dorm room! I made some a couple days ago for dinner and it was heaven. I didn't have tortilla chips on hand, but I did have these really great pita chips from Costco. I didn't know if they would go with the guac, but they DO! Try it. Here's my recipe, but please feel free to mix it up and add whatever suits your fancy.

2 Ripe and Delicious Hass Avocados
1/4 Yellow Onion, chopped
1 Ripe Tomato
The Juice of One Lime
Salt and Pepper, to taste
1 Tablespoon chopped cilantro, or more, if you're a cilantro fiend

First, cut the avocados open and cut a checkerboard pattern into each one. This way, when you scoop it out into a bowl, you'll have nice little chunks of avocado. Chop the tomato and onion into bite size pieces. Take about a handful of cilantro and finely chop it. Here in my dorm I don't have the official big knife to chop cilantro, but my sharp steak knife type thing works just fine. Mash the avocados slightly with a fork. Add the tomatoes and onions, and mix everything together. Throw in the cilantro and squeeze the lime into the bowl. Add some salt and pepper and mash it all together. Take out a pita chip and go to town. Sometimes I add some chopped red bell pepper, red pepper flakes, chopped jalapenos, or any kind of hot sauce. If I'm in a hurry, I'll just mash up some avocados and add this amazing salsa from this local food store called Andy's in my beautiful home town of Sonoma County! It looks just like pico de gallo, so it's like you slaved away chopping up onions and tomatoes, but you didn't! So if you're in a hurry, grab some chunky salsa and just mix it in with the avocados. Add some lime and you're set!
